Quick and Convenient Vegetarian Recipes
If I had the phone on me I would take pictures as I go, but alas I don't.
You're just have to take my word when I say everything looks and tastes great!
Spicy Black Bean Burgers:
1 can Goya black beans, rinsed
1 can corn, rinsed
Seasoned breadcrumbs
1 egg (there are plenty of substitutes for vegans.)
Crushed red pepper to taste
After rinsing, throw your beans in a bowl and mush them up with your hands. Sprinkle in some corn (however much you would like,) and about a 1/2 cup of breadcrumbs. Add in the egg and the crushed red pepper, then mix it all together with your hands again. Form patties and fry them in a tablespoon or so of olive oil. Flip them often, but gently, so they don't fall apart. I like to cook them until the outsides are nice and crispy. Personally I like mozzarella cheese, spinach, and carrots on my burgers.
Edamame Stew:
1 bag frozen Edamame (in shells I suppose. That's what it said on the bag at least.)
1 28 oz can of diced tomatoes (I got some on sale at the store that had onion, basil, and garlic already in it.)
Those things if you don't already have them
Random veggies you got laying around or in bags that you don't want to go to waste. I used carrots, spinach, and threw in some rinsed black beans.
2 teaspoons cumin
1 teaspoon coriander
3 teaspoons lemon juice
Crushed red pepper to taste
1/2 cup of fresh mint is a badass garnish.
Boil the edamame for 5 minutes, then drain. Rinse the black beans. Throw everything in the pot and stir it real good. Bring it to a boil, stirring occasionally so **** don't stick to the bottom and burn. After it boils turn it on super low and cover it for 20 minutes. After that you're good as gold. Makes enough for about 4 servings. It's filling as hell.
Berries and Lemon Creme:
1 Vanilla Activia Yogurt Cup
3 teaspoons of lemon (or to taste)
Berries
Throw the yogurt in a bowl and mix the lemon juice real good in it. Place the berries on top so they look real fancy like. Tadah!
