1600 cal vegetarian menu ideas??

I'm starting calorie counting as from tomorrow & just wondering if anybody follows 1600 plan and is vegetarian? Could you give me an idea of what you eat/how your day looks please? Xx

    I eat closer to 1400 calories, but feel free to flip through my diary! As a quick overview, some of my favorite vegetarian foods:

    - Tofu scrambles! I use the recipe here: http://www.theppk.com/2009/10/tof-u-and-tof-me-scrambled-tofu-revisited/
    - Big stir fries with tofu, tempeh, veggie sausage and tons of veggies over rice or quinoa.
    - Oatmeal with peanut butter
    - Roasted winter squashes with Tofurky sausages
    - Breaded baked seitan cutlets and baked potatoes
    - Seitan roasts (or grilled slabs on the George Foreman)
    - Rice and beans (check out some variations here: http://www.nomeatathlete.com/rice-and-beans/)
    - Fresh fruits and veggies for snacks
    - Clif Builder bars (the chocolate mint is my favorite!)
