Need Help With Calories

So during the week I eat about 1200 calories, depending on what I burn that day. However, Friday, Saturday, and Sunday I pretty consistently eat (and log) 2000+ calories and also what I burn. If I do the overall math for the week I come out to between 1500 and 1600, which is 200-300 below my TDEE. I guess my question is whether or not the drastic differences between days will affect my loss or if total overall loss is what matters?
Edit to say that weekend consumption is so much higher due to family functions, going out to eat, hanging out with friends, etc.- but I still log.

As long as the week averages out with a deficit, you'll lose weight.
The problem is that the scale is not going to show a consistent drop in weight, which may cause you to become discouraged. As long as you understand that over the weekend you're taking in more grams of food (more waste storage in your bowels) and more sodium (more water weight) is causing the scale to not reflect your weight loss, you'll be fine.0
