Hi friends! I have great recipe that i would like to share with us! It's a very low carb and low fat pancake/crepes recipe, grate for atkins or low carb friends. It's delicious, healthy and it's sure you never miss again the original pancakes.

Ingredients:

1 cup of eggwhites.
2 tbps of ground flax seed mel
2 tbsp of wheat bran, crude
2 tbsp of soy protein powder or whey powder
1/4 cup of 1% milk
1-2 packet of splenda
Salt
1/2 tsp of baking powder

Mix all the ingredients. If the mixture seems too be too thick, add a little bit more of milk, also if you like more the thin pancakes, like a crepe, add more milk. Cook in a pan.

Note: You can add 1 tbsp of melted butter, they will have a less dry texture.

The recipe make 6-8 pancakes, it depends the diameter and size you make it. Each one is about 45 kcal, 1 g fat, 1.5 g carb, 1.5 g fiber = 0 g net carbs, and 7 g protein.

Try it, and let me know how they turn!!

If you are not a very low carb fan you can add it oatmeal and wheat germ! They turn also delicious!. I like also to add some extra flavor with vanilla extract or cinnamon for my breakfast!

You can also make a thinner mixture (more like a crepe), and use it for wraps, fajitas, crepes, etc...
  • These sound really tasty. I'll use Walden Farms Pancake Syrup, which is really good, NO sugar. It's designed for Diabetics.
