How to increase particular macros?

Hi All,
Just been looking at all of my Reports, and it seems that carbs are always well over, calories are normally a little over, and Protein is normally the same, but Iron, is pretty low, fibre isn't as good as it should be either. Then all the vitamins im not hitting 100%
Im studying nutrition at the moment as well, while I pretty well at this, the Australian Guide To Healthy Eating states to have 5 veggies and 2 fruits a day, even when I incorporate this, plus some bread for breakky and a bit of cheese and chicken for dinner, im still not hitting all the marks? Otherwise if I do, my calories will be blown wouldn't they?
