Gluten free four weeks. Food help.

Hey! So I am a nursing student and i talk to several other students doing research and a friend came across an article about gluten effecting people with IBS. I have been having horrible flair ups since going with whole foods and whole grains.I gained almost ten lbs and had to go to the emergency room. I was given new meds and decided to try gluten free living for four weeks to see if that helps with the situation. The problem now is I have no idea what to eat during the day. Dinners are simple because I normally cook then, But my lunch is all messed up because no lunch meats, wraps, noodles unless rice and i actually have to cook. Any ideas on lunch foods?

Cook more of the food you eat at night and eat leftovers. As long as you don't eat the same exact thing every night, it shouldn't get boring.
That's what I do, but not because of any intolerances. I find it just to be easier to cook extra meat at night so that all I have to do is reheat it the next day.0 -
Rice cakes with humous or cottage cheese
Egg salad
Vegetable soup
Slice of cold tortilla/ fritatta
Baked potato with cheese, prawn, chilli or curry filling
A Spanish tapas plate of cured meats, cheeses, olives

The easiest route would be just to make extra dinner and take leftovers for lunch. That's what I do for my husband and it works well for both of us. Lunch meats can be tricky as some can sneak gluten in and some are GF. If you cook a batch of chicken breast or other meat you like you can add that to salads for an easy lunch too. Lettuce wraps or gluten free wraps are good in place of sandwiches. Chicken or tuna salad on lettuce or in tomatoes are both good too.0

I do a lot of leftovers. If you like salad you are set...huge salad with a mix of veggies and whatever your protein was from dinner (chicken, beef, etc.) diced up.0

How did you do with lunches before? Just skip out on everything containing gluten - I doubt that you can't find a single lunch item without gluten. When in doubt - just ask.0

My kids have celiac, so I make their lunches for school everyday. Larabars are gluten free, and we do yogurt and fruit. I also do deer sticks, that we have processed at butcher and he tells us what he adds so I jpknow they are gluten free. My son has violent reactions to gluten, and he's type 1 diabetic, so we are super careful. The hunts pudding cups are easy and gluten free, as is applesauce. Hope this helps for easy grab ideas.0

I've been gluten free for over a year now. I eat leftovers, gluten free soups, salads (with gf dressing), and the Indian food packets - like Tastybite or whatever. Nice spiced channa masala that heats up in a minute. :-)0

My mom suffered from irritable bowel syndrome for 30+ years before she found out that it was gluten. It's worth a chance!

I try to aim to eat whole foods when it comes to eating in general, so with grains, beans, quinoa, gluten free oatmeal brown/wild rice, potatoes and other starches like corn, peas. I make most of my food at home, so I'll take that to eat for lunch, so when it comes to protein, chicken, tofu, maybe some steak, tuna, other fish, turkey, eggs. Then just load up on the veggies. Snacks wise, I was on a kick on larabars, but i got crazy because of the sugar. So now I'm trying to stick to veggies with hummus, popcorn, any leftovers and add some type of fat into my meals, such as coconut butter, almond butter, seeds or other nuts.
As with changing your eating habits, you just gotta go in prepared. When I tried going gluten free last year, it was hard, but I figured it was my nutritionist's way of pushing me to eat whole foods more and less processed. And I know there's A LOT of gluten free processed foods out there, so just be wary and read the labels because they like to sneak in more fat and sugar into those items.
