Pina Colada Upside Down Cake

Ingredients:
Angelfood cake mix
Coconut dry pudding mix
Water
1/2 can crushed pineapple

1. Mix cake mix and pudding mix together in a bowl.
2. Add water and mix until proper cake batter consistency.
3. Spoon 1tbs crushed pineapple into bottoms of whoopie pan (must be non-stick!).
4. Spoon batter over crushed pineapple.
5. Bake till golden brown.

Makes 24 whoopie pies.

This would probably work just as well in a muffin pan with cupcake liners, but a whoopie pan is what I had. Serve warm with a little fat free whipped cream and a cherry on top for fun. This recipe, by the way, is the product of my sister's genius. Gold star to you sis. It was so delicious, I had two.
