Southwest take on a meatball sandwich that I got from Gordon Ramsay. For lighter, bake the meatballs in an oven at 350 until cooked through. You can also use low-fat mozzarella cheese, which I did.
The fresh salsa take on the tomatoes rather than marinara makes it light and refreshing.
And if you're not into the sandwich, the recipe yields 20-30 meatballs, which are very healthy and delicious on their own.
