Healthy Curried Chicken Salad

Healthy Curried Chicken+Fruit Salad by Tessyloowhoo

Ingredients:
1 grilled chicken breast (6oz) chopped
1/4c raisins (1oz)
medium Gala apple (140g) diced small pieces
3 stalks of celery (88g) chopped
Non-fat plain greek yogurt (5.3oz)
1/2tsp curry powder
1/4tsp cayenne powder
sprinkle of cinnamon

Directions:
Combine all ingredients in a bowl. Serve with romaine lettuce leaves as “bread”

Nutrition Facts for 1 Serving (1/3 of recipe or about 182g without lettuce)

Protein: 20g
Carbs: 19g
Fat: 2g
Sodium: 50g

    Very nice. I also use nonfat greek yogurt, but I never thought about adding apples. I will try that, but I will leave the cinnamon out. That spice is not allowed in my house.

    Apples and grapes are both wonderful in chicken salad. Heck, even pears and peaches! They compliment the chicken quite well.

    And cinnamon is a staple of curry!! *gasp!*

    I have a "reaction" to cinnamon. The smell itself makes me puke (big problem around the Holidays) and I may also have a mild allergy because if I eat anything with that spice my tongue starts itching. I use curry but in small amount; too strong flavor for my taste.

    And yes, I have used grapes in the past but I will try other fruits too. Nice idea, and thank you for the suggestion.

    Ok, just made it.

    I seared the chicken on both sides in a skillet to get a nice browning, then finished in the oven for 20 minutes at 350F.

    While the chicken was cooling, I diced up a Red Delicious apple and soaked it in a water and lemon juice mixture for about 15 minutes. I prefer doing honey/water, but I'm about out of honey.

    While that was soaking, I took the chicken and sliced it, cubed it, then put it in a large mixing bowl.

    Then I added in the diced apple and raisins to the mixing bowl. Then mixed in the greek yogurt.

    Then added in my spices. I added paprika and chipotle powder for a bit of a smokey flavor as well as a bit more heat.

    Then I grilled a pita bread for a few minutes to warm it up, sliced it in half, and stuffed it with the chicken salad and a bit of spinach.

    I love Indian food, so I was a big fan of this.

    Ingredient List:

    Raw Boneless Skinless Chicken Breast (740g)
    Red Delicious Apple (183g)
    Raisins (80g)
    Chobani Greek Yogurt Vanilla Flavored (227g)
    Salt
    Pepper
    Garlic Powder
    Paprika
    Chipotle Powder
    Cayenne Pepper
    Black Ground Pepper
    Curry Powder

    I'm estimating 10 servings and around 145 Calories per serving of the chicken salad itself.
