Easy Baked Penne - 385 cals
I made this with crumbled sausage, but you could substitute ground turkey or something else to lessen the fat/calories. The way I made it, I cut it into 12 servings at 385 calories a piece. It was pretty yummy - my kids really liked it.
Ingredients:
2 C. mozzarella
1/2 C. water
15 oz. Ricotta cheese
1/2 C. Parmesan cheese
24-26 oz. pasta sauce
1 pound sausage (cooked and crumbled)
8 oz. Penne pasta (uncooked)
Preheat oven to 400 degrees. Set aside 1 C. mozzarella (for topping). Spray 9x13 pan with non-stick spray.
Combine all ingredients. Place ingredients into pan and cover with foil. Bake for 55 minutes.
Remove foil and sprinkle with the remaining mozzarella. Bake uncovered 5-10 minutes (until bubbling).
