Goat Cheese Recipes?

I love goat cheese, but mostly only have it at restaurants.

I'm gonna pick some up at the store today to use at home. Anyone have any good recipes to incorporate it? I'm thinking some kinda flatbread with balsamic reduction drizzle, but done know what else to add.

    I love goat cheese too. I put it in salads and I use this appetizer recipe for all family get togethers:

    I use a jarred artichoke and tomato bruschetta instead of sweet peppers. Everyone loves it and there is never any left!

    Omelet with spinach.
    In salads with beets and smoked salmon.
    On pizza (or muffin pizzas)

    Folded omelet with salt and pepper to taste, goat cheese in the middle, and chives sprinkled on top of the goat cheese and top of omelet. Delicious.

    It's good in scrambled eggs with fresh mint. (Sounds odd but it's really good.)

    Also it's good in dates: slice it halfway to get the pit out and stuff some goat cheese in there.

    I love beets with balsamic vinegar topped with goat cheese and walnuts.

    love crumbled goat cheese on a salad with steak or a saldad with grilled chicken and strawberries yummy!

    I take slices of sausage or zuccini, put some goat cheese on it and top it with a black olive. Or I crumble some in my salads, put on my burgers, make lasagna roll ups with ground beef, spinach and goat cheese (topped with marinara sauce). There's tons of things you can do with goat cheese. Just substitute hard dairy cheese with goat cheese. My other favorite is stuffed portebello mushrooms. Ground beef, goat cheese, mushrooms and tons of spices, put the topping in the mushroom and bake until heated through.

    Yes, it's good in scrambled eggs/omlettes. I also love it when I make individual pizzas. I make them with tortillas, tomato sauce or pesto, goat cheese, chicken sausage, spinach and/or whatever veggies I have on hand. I love goat cheese. I also just had some in a turkey wrap last week with roasted red peppers and balsamic vinegar, that was so good.

    bump for idea. I love goats cheese and used to buy goats cheese in bread crumbs from birdseye. I dont think they make them anymore, but was going to atempt making some soon!
