Seeing as it's National Curry Week...

I made this peanut butter and coconut turkey curry for my family last night and it tastes amazing so thought I'd share :)

    Mine is very easy, cut chicken in chunks, cook in pan, add fat free sour cream and curry powder, a bit of chili powder, and simmer for a while... then serve with rice.

    Funny, I didn't even know that National Curry Week was a thing and we made curry for the first time in months on Sunday :)

    Usually, we make Thai curry (red or green) using the curry paste from the grocery store, "lite" coconut milk, sriracha (we like it spicy!), a touch of brown sugar, fish sauce, and whatever vegetables we happen to have in the house that need to be used ASAP. We like to make a double batch so that we have leftovers for a day or two.

    I'm pescetarian, so a lot of times we'll use cubed tofu or the meatless chicken strips. When shrimp is on sale, we'll use that.

    I could eat it straight from the container with no rice, but mostly we put it on Basmati rice. So yum!

    National Curry Week is the best week of my life. I don't make a healthy version, but I do make a really delicious coconut milk/thai yellow curry paste/chicken/potato/carrot/onion curry that is pretty much my favorite food ever.
