Mini Breakfast Muffins

I've been looking for a breakfast muffin recipe that I can make ahead and heat up in the morning. This is my first successful test and I'd like to share it with you all. Each mini muffin is 60 calories based on my ingredients.

Ingredients
- 3 slices of deli turkey
-1.5 cups of Egg Beaters
-1.5 oz of shredded cheese
-Optional seasonings (I used pepper and garlic)

Directions:
1. Slice the turkey slices into quarters
2. Place one quarter slice in the bottom of each muffin cup (previously sprayed with Pam)
3. Mix Egg Beaters, shredded cheese, and seasonings
4. Spoon 2 tablespoons of egg/cheese mixture into each muffin cup
5. Bake at 350F until done (about 15 minutes, keep checking on it)

    They really are! I'm gonna experiment with other ingredients like peppers and onions.

    I've done the "paleo" version

    a slice of bacon at the bottom and scrambled whole eggs with a ton of veggies. YUM!
