I was just wondering how the purple skin white flesh japanese sweet potato and okinawa purple flesh ones compare to the typical orange ones. Does anyone know how these stack up as far as calories, sugar, and nutrition?

They are about the same. They both have 130 cals in 4 oz; purple = 29 carbs, and 2 gr protein; yams = 30 carbs and 1 gr. protein.
But I found out that the purple ones need to be cooked longer and I also need to put butter or they turn too dry. I can eat the yams out of the oven or microwave without adding anything.
I hope this helps.0 -
Thanks! Thats good to know! And I just baked some purple ones today and they did have a drier texture which I thought might make them more starchy or unhealthy but I guess their just different textures.0
