Lunch on the move

Hi - I'm a sales rep and do a lot of miles driving every day. Does anyone have any really tasty, low fat, low calorie lunch ideas for me?
If i have another plain sandwich for lunch i'll go of my rocker!! :explode: :explode: :explode: :explode:

    Good morning mastergracey. I don't rightly know what your idea of a plain sandwich is, granted on the go, on the move, limits the options; Soup to go vs Salad to go vs Sandwich to go. For me personally, what would qualify as a plain sandwich would be a simple pbj (and not my ultimate version of this option - PBJ with nutella or rawtella with bananas and cinnamon French Toast or panini-styled, or waffled or in a sweet crepe).

    My off the hip suggestions, hoping to jarr your inner-chef for self:

    Pizza subs/Calzone/Pizza
    Meatballs or falafel balls (or any of the bean/lentil/quinoa patties) baked.
    Fruit and cream cheese
    Egg salad
    Soups with bread
    Curried chicken salad
    Pulled (crockpot) meat (pork/chicken/turkey/beef brisket) sandwich
    Chicken w. seasonal veggies warmed salad
    Egg white frittata
    Seafood salad (salmon/tuna/shrimp)
    Quesadillas
    Deli meat wraps
    Mushrooms with lean meat/tofu/vegan meat (Oriental)
    TC or Turkey BLT or Melt sandwiches
    Noodles/Pasta salads with pesto/nut sauce
    Seafood slaw
    Lean meat nut-crusted/breaded (like Panko) ovenbaked options
    Bean (or Lentil) salad with grilled meat or oven fried/poached/boiled whole egg or egg whites
    Lean meat/fish panini

    ** Considerations to ensure a low calorie lunch: Low-fat, Low-calorie mayonnaise or sour cream or mustard and other condiments of your preference Eg Red pepper jelly. Be mindful of your choice of butter, bread (wrap, flat bread) selections like multigrain, root vegetables like potato, honey oat, whole wheat, focaccia, garlic (olives/herbs/spices/sweeteners like molasses), choice of sandwich greens (sprouts/arugula/spinach/rocket/etc), preparatory method and portions. For pizza (calzone, etc) watch your choice of dough and cheese and the combination of what you opt to load (as your topping) your pizza with.

    I will assume you are taking a cooler with you:
    Quest Bars
    Make a protein shake the night before and freeze it in a blender bottle. It will thaw by lunch time and you just re-shake it in the bottle.
    Make your own little veggie tray, add some fruit and low fat cheese.
    Greek Yogurt and then make a lean low sodium deli meat wrapped in lettuce instead of bread. Add mustard. Yum!
    Make the mini egg muffins from the recipe page. 20 minutes to make and they last all week and are also good cold.
    Get a thermos and put homemade soups in it. (Pull over for 5 minutes to eat if you have to)
    Jerky
    Almonds ( I keep a bag in my truck)




    Keep in mind they also make insulated plates and bowls that are perfect for heating up your meal before you leave for work and it will still be warm (not hot but warm) when it's time for lunch.
