1 (16 oz.) Bag Frozen Cauliflower
1/2 Cup Water
5 Wedges Laughing Cow Light Cheese
1/4 teaspoon Salt
1/2 teaspoon Pepper
Place cauliflower in a microwave safe dish. Add 1/2 cup water. Cover and microwave on high for 10 minutes or until tender. Drain well and place into a food processor. Add the cheese, salt and pepper. Process until smooth.
Serves: 4 (1/2 Cup Each)
Per Serving: 52 Calories; 3g Fat (46.3% calories from fat); 4g Protein; 3g Carbohydrate; 1g Dietary Fiber; 13mg Cholesterol; 467mg Sodium. Exchanges: 0 Grain (Starch); 1/2 Vegetable; 0 Fat.

These turned out really well. I added some garlic powder , just a personal preference. My step daughter who HATE Cauliflower and LOVE potatoes ate these and never knew I had been sneaky and switched em out0
