Chicken Tortilla Soup

Does anyone have a good lowfat Chicken Tortilla soup recipe? I love the soup from McAlister's Deli and was looking for a healthy alternative at home. I have googled and found a few but I wanted to know if you have a "tried and true" recipe.

    I found a salt free taco seasoning mix recipe online and we've used it to make tacos. Leftovers turn into soup.

    I use this recipe and add black beans and corn to make it more filling

    The calories are relatively low but the sodium is pretty high.

    3 lbs frozen skinless, boneless chicken breasts - boil and shred or chunk
    2 cans black beans - drained and rinsed
    2 can pinto beans
    1 can sweet corn
    1 can Rotel
    1 small can chopped chilis
    1 small can chopped jalopenos
    2 packages Hidden Valley Ranch Fiesta Ranch dry mix (found in the salad dressing aisle)
    8 cups of chicken broth (canned or 8 bouillon cubes and water)

    Mix everything together in a 7 quart or larger crockpot and let cook all day (4-6 hours on high or 6-8 hours on low). The longer it cooks the better it is.

    Really good served with a little shredded cheese and white corn tortilla chips.

    Here is one of my personal recipes. I omit the tortilla crisps now, and I vary it depending on ingredients on hand.

    Chipotle Lime Chicken Soup


    Cilantro Leaves - 2 Handfuls - Raw Juice
    Campbell's - V8 Low Sodium Original 100% Vegetable Juice 11.5 oz
    Goya - Low Sodium Black Beans, 2 container (1 4/5 cups ea.)
    Swanson - Cooking Stock, Beef, Unsalted, 1 container (3 cups ea.)
    Del Monte - Petite Cut Diced Tomatoes With Chipotle Chilies*, 1 container (1 4/5 cups ea.)
    Great Value - Bottle Water , 8 fl oz
    Generic - Smoked Chicken Breast, 11.75 oz
    Birds Eye - Frozen Sweet Corn, 1 cup
    Fresh - Lime Juice, 8 tbsp
    Add Ingredient

    ~~ edited to add the spices: Onion Powder, Garlic Powder, Cumin, Chipotle Powder and Cayenne Powder


    * I add all liquid ingredients to the pot, then use an immersion blender to puree the diced tomatoes. Then add in the remaining ingredients.
