Prosciutto Wrapped Scallops

Believe it or not, this is actually diet-friendly. :)

PROSCIUTTO WRAPPED SCALLOPS

1 lb scallops (I bought a bag of frozen scallops, and thawed them prior to cooking)
1/4 lb prosciutto (if you can get it at the deli counter, have them slice it as thin as they can get it)
several sprigs of fresh rosemary
lemon juice
sea salt and pepper
"I Can't Believe It's Not Butter" (for those not on a diet, you can use regular melted butter or olive oil)
garlic powder
dried chives

1. Spray a cooking pan down with non-stick spray (PAM works fine).
2. Set your oven to BROIL. Let it heat while you prep the food.
3. Cut the prosciutto into long, thin strips, and wrap each scallop in a strip of prosciutto.
4. Stripping away at least two inches of green from each rosemary sprig, stick the sprig through the scallop to hold the prosciutto in place.
5. Spritz each scallop with the "I Can't Believe It's Not Butter" (or olive oil or butter).
6. Add a pinch of salt, pepper, garlic powder, and chives to each scallop.
7. Let sit for about 10-15 minutes while the oven heats.
8. Broil for 8-9 minutes or until tender.

(Note: you do not have to eat the prosciutto when it's done - just peel it off when you remove the rosemary sprig.)
