Side dish for white chicken chili..

So my mother in law is making white chicken chili tomorrow for our family photos. I am supposed to bring a side dish, and I am completely stumped. Corn bread, cheese and crackers are already being brought. Does anyone have any awesome ideas or recipes?! Thanks!! :)

    Sounds like a great idea! I was thinking salad or coleslaw at first, but the southwest theme ties it all in! Thank you!!! :)

    I'd do a big salad with a southwestern type theme

    This. Make it kind of a chopped-salad style, black beans, corn, bell pepper, some type of chili (depending on how hot you like it--Hatch is a good flavorful one that isn't too hot). Add a little lime juice and cilantro (I hate cilantro, so I sub in parsley). If you need to stretch it to feed a lot of people, add some rice.

    If you have time, roast or grill the corn and pepper and then cool before adding. Gives it lots of nice smoky flavor. I make this a lot and it's always finished at a potluck.
