Recipe Request - Oatmeal Squares

Have any of you seen those quaker oat oatmeal squares in the stores? They're excellent, but not the most healthy, and also they tend to be kind of expensive. However, bulk oatmeal is super cheap, as is granola. Can anyone point me towards a diet/diabetic friendly recipe to make these things on my own??

    5 cups oatmeal
    1 cup applesauce
    2 tsp vanilla
    cinnamon to taste
    2-3 large eggs
    2 scoops protein powder
    1/2 cup (up to 1 cup will work) peanut butter


    preheat oven to 350 F

    Mix ingredients, and bake in a rectangular cake pan for 10-20 minutes. You can also drop them onto a cookie sheet and make cookies.

    I haven't run the numbers on it, but the protein is high, and there's no sugar.

    That does look good! Could I leave out the protein powder, do ya suppose? I don't have any on hand.

    I just calculated the nutrition info on Sparkrecipes using unsweetened applesauce, 3 eggs, and 1/2 cup chunk-style peanut butter and got the following for 12 servings--I don't know how many servings is reasonable. Also, didn't add in protein powder because the nutrition depends on what kind you use.

    Carb 28
    Prot 14.4 g

    12 servings would be reasonable, as they're quite filling.

    I use egg white protein powder, and that would add about 200 calories to the entire recipe.

    I just put oats back into my diet, as I've discovered some processed in a dedicated plant (can't have wheat and cross-contamination is a concern).

    One tiny bar really works as a pre or postworkout snack or a light breakfast. Enjoy! I also usually add a bit of cinnamon.
