    Pork loin: make a Santa Fe style rub with cumin, garlic powder, coriander, dried oregano, chili powder, chipotle powder (or ancho if you want it less spicy), whatever else you'd usually add to a tex-mex/taco seasoning kind of thing, but then add cinnamon, allspice, and some brown sugar. Don't forget salt in the mix! coat the pork loins in this rub, then roast until light pink inside...LIGHT PINK, not gray! The last 5 min of roasting, drizzle a little honey on top of pork, maybe little dabs of butter.

    Roasted root veggies: tie in to the pork flavors with maybe just some olive oil, cumin seeds and garlic (S&p, of course).

    Dessert: use that heavy cream to make homemade cinnamon whipped cream to put over some sauteed apples.

    Good luck and have a great dinner, whatever you choose.

    I'm voting for the other pork/apple recipe that uses a 400 degree oven. It would work great with the roasted root veggies someone else suggested.

    I just wanted to add that sauteing the yellow and orange tomatoes in olive oil and garlic until they burst and adding some balsamic vinegar would make another good side. You could even top that with your gorgonzola cheese, or steal this recipe instead http://www.savynaturalista.com/2013/08/26/cherry-tomato-stir-fry/ and just leave out the chicken.

    I can only get them at the farmer's market here. I think they're slightly sweeter than an orange carrot.

    Did you also know there are yellow watermelons? I just learned that one when I cut open my watermelon this weekend - also from the farmer's market...

    Hmm... I like the idea of the apples and pork chops... always delish.

    Maybe you could make a rustic stuffing with some of those pretty vegetables and a side salad to go with it.

    I don't know... perhaps my idea is too boring... but it's making me hungry!!

    I have surprise dinner guests coming tonight and need to prepare a meal in under 1 hour (prep and cook time).

    I have on hand:

    Veggies:
    purple & orange carrots
    parsnips
    fingerling potatoes
    yukon gold potatoes
    every color pepper imaginable
    broccoli
    garlic/onion/other basics
    lettuce
    orange and yellow grape tomatoes

    Meat:
    chicken
    pork chops
    pork tenderloin

    Dairy:
    heavy cream
    gorgonzola
    asiago

    and otherwise i have all the basics and a very well stocked pantry. I have no time to go to the grocery store, and little fruit on hand (I think just apples & lemons).

    I would like to do something other than a stir fry, a simple baked chicken & veggies....

    Stuffed Pork?? Apples, bread crumbs, cranberries???? Can I pull that off fast enough?

    Any semi-creative ideas? (And no, my love, I am not carbonating any fruit :)

    For dessert you could always make Baked Stuffed apples and serve it with ice cream or cream. :))

    ETA: Or Poach Apples in red wine and serve it with a short cut panna cotta or creme ~ if the panna cotta fails to set. OR an Apple Cranberry Galette ~ A REAL time saver.

    * You may even have enough time left over to make a coffee cookie or Baklava, nuts et al to serve with Espresso, Cardamom Pistachio Coffee etc to round off the evening after dessert.

    **Further, your yellow Watermelons~ turn it into a granita to be served as a palate cleanser after the Coffee service.

    ** You could make a Caprese Salad from the Gorgonzola and two toned Cherry Tomatoes. :))

    ** Oh and a Carrot and Pepper soup to start off the evening.
