Hey guys I wanted to get a few ideas for some new meals that I can prepare for my family, preferably few ingredients and not a lot of time....I'm a busy busy bee most of the time and don't have as much time to cook as I used to!!! I would LOVE to hear your ideas and try some new recipes!!! Also I would love to hear if you have "made over" a favorite food to make it healthier!!! : ) Getting bored with the same ole, same ole each week lol!!! God bless!

A couple that I do is:
I cook my eggs in the microwave (scrambled). I don't like to nuke them in a regular bowl for it is hard to get the eggs washed off after the fact (I am lazy ha ha). So I buy the paper bowls (like paper plates). Dixie makes them, but I usually buy the Kroger or Walmart brand (more for the money). I will crack 2 eggs, scramble those with a fork and then add my seasoning (usually pepper and Mrs dash chipotie seasonings). Then I add what I want. chop up fresh mushrooms, some shredded cheese. jalapeno peppers, spinach etc. What ever floats your boat. Then I stick in microwave for 1 min. I watch it and when I see it poofing up, I stop microwave and stir the eggs good, scrapping cooked egg off sides of bowl, then nuke some more, when it poofs up, I stop microwave and stir again. (eggs cook quickly this way, so you do have to watch them for the poofs) Depending on what you add to your eggs, it may take a little longer. I also add about 1 TBS of water for each egg when I scramble them. I use no butter or oils at all.
Another one I do is BLT. I love those things, but I live alone and I just can't see buying a whole package of bacon. So I will use bread of choice (for me usually 100% wheat-due to being diabetic), then I put my mayo on both slices. I then use the real bacon bits (not the imitations ones). I usually buy these at Kroger (less sodium for the Kroger brand than Oscar Mayer brand) or I buy a bag of these at Aldi's. 1- TBS is only 25 calories. I will put 1 or sometimes 2 TBS of these "real" bacon bits on one of the bread slices. I then layer either lettuce (iceberg, romaine, etc) or fresh spinach (I actually preferr the tast of the fresh spinach over the lettuce's). I then slice vine ripe tomoto's and put a couple slices on the sandwich. Place bread slice on top, cut in half and walla, Nice BLT, easy, quick and didn't have to cook any bacon or feel I had to eat a whole package of bacon up.
Another one I do (I lead a very busy life and just never have time to cook much in the oven). I love cod fish. So I take my Cod fillet and place on a plate (frozen) I put in microwave for 2 minutes. This cooks it some and water comes out of it. I drain the liquid that is on plate, then I take Real Lemon juice and sprinkle that over the top of the Cod fillet. (about 1 to 2 TBS, depending on size of Cod fillet). I then season it with ground pepper and cajun seasoning. Pop back in microwave for another 2 minutes. Then I check fillet to see if it is flakey yet (cooked fish gets flakey) Usually that is all it takes to cook it (total of 4 min), but some times I do have to put back in for another minute or two. When fish is done. I will add a veggie and some cottage cheese. I eat a lot of broccoli (frozen). so I will also nuke this in the microwave prior to cooking the fish. While fish is cooking. I will add Mrs dash chipotie seasoning and some times sprinkly shredded cheese over the broccoli. When fish is done. I pop broccoli back in microwave for another minute to melt the cheese and warm broccoli up a bit more (while broccoli is cooking, I get the cottage cheese out to add to the plate fish is on Add a glass of V8 low sodium and I am all set in a very quick time frame. (what can I say, I am a lazy cook, ha ha).
I have an open food diary too if you want to take a look. I eat very healthy and eat 6 times a day. (3 main meals and 3 snacks)0 -

I use Greek yogurt (no flavour) instead of sour cream (for tacos or chili) and instead of mayo (for tuna fish or egg sandwich). 1 Tablespoon of Greek yogurt is so much less than 1 Tablespoon of cream or mayo!
I also eat burgers with only the bottom slice of bread.0 -
Instead of making whole batches of cakes or whatever I improvise the recipe to only serve one, use self-raising flour only, substitute milk and eggs for hot water and cook in a microwave in a shallow dish (dinner plates work really well for making pancakes, just use your imagination).0

I live alone as well, and like you I don't buy bacon because it goes bad before I can eat it all. LOVE this BLT idea (I always have the Real Bacon Bits in the fridge) and will absolutely give this idea a go... brilliant! Thank you!0
