My First Quinoa Recipe - Success!
1 cup (uncooked) red quinoa - yields 3 cups cooked
1 can corn
1 can diced tomatoes (preferably mexican-style)
2 cans tuna
1 large avocado
Garlic, lime, and salt to taste
You can eat it hot but it's even better cold.
This makes about 6 1-cup servings with 213 calories, 4g fiber, and 11g protein! I didn't think I was like quinoa but this was surprisingly delicious

I had quinoa with a spaghetti sauce mix of ground turkey, spinach and mushrooms. so yummy0
