late night work shift and keeping healthy

So I need some advice and guidance on a new routine I am considering to start.
So I am going to start possibly working a night job from home that will give me the luxury to maybe study in my spare time on the job as well :)
Only thing is I am really nervous in terms of food schedules being thrown off. Now I know it's calories in vs calories out for sure but I'm still nervous. I will admit my schedule at the moment isn't any better: I am notorious for waking up late and sleeping late ie late afternoon waking up, and dinner around 10 pm.

I am hoping that as long as my calorie intake is good and I'm eating the regular healthy foods I eat that my health won't be affected.

My meal plan at the moment is basically having protein shakes full of fruit and other good things twice a day as meal replacements, and then one meal which usually consists of 3/4 plate of lightly sauteed vegetables with some sauce, cheese, protein and a bit of carbs ( slice of bread, baked potato, noodles, etc).
I know that I should be eating more frequently and drinking a ton of water but I usually don't have time for more meals as I wake up so late and then usually have to be out the door for something or another. My days have LONG food gaps and I'm commuting for an hour or two so I don't want to keep drinking water either. These are just my minor setbacks but I am working on it.

How would this be if I continued it even though I had bad sleep patterns?

1 pm- wake and then have a pre and post workout shake like mentioned above and workout
At 4 pm - have my "dinner meal" so this way I burn those calories in the day time when I'm more active
Snacks throughout the rest of the time, water, fruit, veggies, rice cakes, etc
Dinner would be around 12 pm - which would be a heavier shake with granola added to it to make it more filling
8 am rIght before bed- snack like a bowl of fruit to make myself full but not feel heavy or full of fatty stuff

How does this sound? Key is that I have to make sure I am not munching on crap in the early mornings when I"m working and studying. I will prep meals in advance so ready cut fruit and veggies and yogurt is infront of me so those are my options to go to and stick to not buying bad food at home.

Sorry for the long post but I am just nervous and it's already really hard for me to lose weight.
