    when I was being really good, I would chop up a bunch of stuff on Sunday

    Grill 4 chicken breasts with different seasonings on my George Forman (but a pan, broiler or grill works too!)
    I would put lemon pepper on one, spicy blackened on on, and what ever on the other two
    and/or
    grilled salmon filets
    and/or
    shrimp

    I would chop up the meats and have them in individual bags or cups for easy use

    I always had 2 bags of lettuce...........baby spring and romaine (iceberg is useless to me)

    Then I would chop up
    onions
    peppers both green and red and yellow
    grape tomatos halved
    zuchini
    yellow squash
    broccoli
    cauliflower

    Cheeses:
    feta, shredded 2%cheddar, goat, bluecheese, smokey gouda

    Nuts:
    walnuts, pistachios, almonds

    With all this in place I had no excuse but to throw together a great salad. Also I kept wraps for those days I wanted to pick UP my salad :laugh:

    I have to do this today as I promised myself 1 week clean eating, which includes a wonderful salad each and every day!!

    I tried a new one last night which was gorgeous:

    250g cherry tomatoes
    1/2 a chopped cucumber
    2 diced red peppers
    1 can of drained kidney beans
    1 can of drained sweetcorn
    4 chopped spring onions

    for dressing:

    1 tsp. tabasco sauce
    4 tbs. red wine vinegar
    1 crushed garlic clove
    1/2 tsp. worcestershire sauce
    1 tsp. ground cumin

    it makes four servings, 170 calories each. I ate mine with grilled mackerel and sweet potato mash, was lovely. I'm going to eat the rest tonight with grilled chicken.

    :laugh: I read that as 250 cherry tomatoes!! Whew, that would give anyone a rash!

    I also love salad made up of cherry tomatoes, avocado, chick peas, cucumber, fresh basil, red onion, and chopped garlic.
