Ground Chicken Shepherd's Pie

Just made this for dinner, and it was delicious so I thought I'd share the recipe.
Ingredients:
1 lb ground chicken, thawed
1 egg white
1 pouch instant mashed potatoes (or 3 cups homemade mashed potatoes)
1/2 cup diced tomatoes
1/2 cup diced green peppers
1/2 cup diced onions
4 slices pan-fried bacon, chopped
1 cup 2% shredded mexican cheese
1/2 cup italian style bread crumbs
2 tsp smoked paprika
2 tbsp ground sage
Prepare mashed potatoes according to package directions and let chill for about an hour before you plan on preheating the oven. Preheat oven to 350. Hand mix ground chicken, egg white, bread crumbs, paprika, and sage until a meaty "loaf" forms. Spray ceramic or glass pie pan with nonstick cooking spray and press meat loaf into pan until it covers the bottom. Top with mashed potatoes. Sprinkle cheese on top and finally, top with onions, green peppers, tomatoes, and bacon. Bake for 50 minutes.
Makes 6 generous portions.
I prepared mine with Betty Crocker roasted garlic mashed potatoes with skim milk and margarine, and this is the calorie information per serving:
Calories: 325
Carbs: 22g
Fat: 15g
Protein: 24g
Not the best pic, but it was very tasty!

ETA: I think next time, I'm going to add some fresh chives and a side of sour cream.
