Killer veggie beef soup!

in Recipes
1-2 lbs lean cubed beef, depending if you like alot of beef. I use 2lbs.
1 medium yellow onion
2 cans tomato juice (NOT v-8)
2 large cans of beef broth or stock
beef base in a jar
few splashes Franks or Tapatio hot sauce
salt and pepper
1/2 head large cabbage
Fresh or frozen green beans
red potatoes with skin 6 or 7 small ones quartered
2 large cans whole tomatoes (not diced)
carrot slices
( you can add any veggies you like, I prefer these veggies. The flavors meld well)
Brown beef in a bit of oil in large skillet , important to brown well. Deglaze skillet or pan with toamto juice (some of it) dump browned beef into large saucepan or pot ( at this point you can place in crockpot if you want to not have to watch it) add both cans tomatoes and the juice and 2 large tablespoons beef base and 2 large cans beef broth. cook 3-4 hours on stove on low or 6 hour in crock pot until meat is fork tender. This can take time, do not rush it. add potatoes and carrots cook until fork tender. Add green beans and sliced cabbage strips. Cook until done . Add splashes of hot sauce and salt and pepper to taste. Some of the best soup you will taste if you do the steps and take the time. The tomatoe juice gives a great brightness and freshness most soup lacks. Hope you try it! Add salad and a crust bread! yUMMY
