I would start by getting a solid foundation of exercise science and proven principles, by reading the study materials of a good personal training certification, like NASM. You can buy them used on Ebay. It's not light reading, but once you have that knowledge under your belt, you'll be able to properly assess the other books that are out there (some of which are only partly true).

    Mind gym
    Born to run
    Racing weight
Joe Friel is good if you like cycling
Bobby McGee for running also Galloway
A life without limits: Chrissie Wellington
    Nancy Clark for nutrition
Leslie Bonci is also a great nutritionist but not sure if she has books or just articles.
