Acorn squash recipe, please...

Hi, I have an acorn squash in my fridge, I need to use before it goes bad. I was thinking of baking it & turning it into some kind of sauce to put over pasta (open for other suggestions tho) I'm not sure I want this sweet but unsure what else I can do with this. Any ideas would be appreciated. I do eat meat & cook a lot, so my kitchen is well stocked. I need this to be able to freeze. I do not care for the taste of eggs or Mrs Dash. Pretty much open to anything else tho. Thanks in advance

Either cut it in half or stab it really well, bake for about an hour in a 350 degree oven and enjoy with a bit of butter. You don't have to make something out of it, it's a vegetable, just eat it.0

just eat it mashed with butter and salt and pepper NOM but I have seen squash mac and cheese recipies that looks pretty darn good, you could google one of those0

I love it plain - or even better, with some toasted pecans on it.
Simple: stab it with a fork several times, bake at 350 for an hour or so (until soft); then cut in half, scoop out seeds, scoop out flesh, and enjoy!0 -
I roasted mine last week - cut in half, scoop out seeds, rub approx. 1/2 TBL of coconut oil all over the inside drizzle agave nectar, sprinkle with cinnamon, and bake. It was like dessert. SO GOOD.0

Peel the squash, dice it, mix it with oil, sage, salt, pepper. Roast it until browned and cooked at about 450.
Then, if you need a little kicker, add a touch of maple syrup for the last few minutes.0 -

I've also made this roasted acorn squash/red onion/kielbasa (or sausage) thing with asiago cheese & sage from Martha Stewart.

I like to roast acorn squash in the oven with some firm, tart apples (like granny smith), sweet onions, and sprigs of rosemary. Toss lightly in olive oil, season with ground black pepper and sea salt. Just before serving drizzle it with a balsamic vinegar reduction. Yum!0

I have this great recipe for acorn squash that's really easy:
1. Cut squash into cubes or slices
2. Place into steamer
3. Steam until the cubes are tender enough to pierce with a fork or knife.
4. Enjoy with a dash of pepper!0 -

A couple changes:
1. I didn't have time to make my own sausage so I picked up some turkey sausage that I like.
2. Spray the pan and roast the squash cut side down for 30 and then flip for 20-30 minutes (or until fork tender). The methodology they use doesn't soften the squash enough...
