I am totally in love with the Yorkshire Provender soup range with my favourite being the root vegetable and barley one. It's autumnal bliss.
Anyway, I thought I would give a bash at recreating it myself going off the ingredient list on the back of the tup and managed to create something really very similar and certainly as tasty.
Makes 4 heart portions at 271 calories a bowl.
Ingredients are:
3 x Carrots (cubed)
2 x turnips (cubed)
2 x Parsnips (cubed)
1 x leek (sliced)
10g unsalted butter
75ml Single Cream
100g dried pearl barley
2 pints of hot water
2 x stock choice (whichever you like apart from beef probably wouldn't work! ; )
Dried mixed herbs
Couple of sprigs of fresh coriander
Fry the cubed veg in the butter for a few minutes.
Add the water and stock and barley
Add the herbs and coriander & Simmer for about an hour
Add the cream near to the point of serving.
Enjoy! : ) x

450g turnip - 126 cals
