hell yes!
*grated raw on a salad
*roasted with garlic and lemon zest....or just roasted on their own
* in a beetroot curry
* baked in aluminium foil, serve with hommous
*boiled whole then mashed, mixed with lentils and made into beet burgers (these are good!)
*made into beetroot relish

I eat them cooked mostly, I love them plain, or in a salad with goat cheese (and smoked salmon when I feel like it) with oil/vinegar dressing.0

Used to eat them alot as borscht (beet soup - can be served hot or cold - I prefer cold). Also on salads, as a side, pickled... Need to try the idea above about baking them and humuus.0

Yes. Love them on salads. There is a restaurant by me that has a salad with pear slices, beets, goat cheese, almonds and a balsamic vinaigrette dressing that is so delicious. My husband has always hated beets but I made him try the salad and even the beet hater loved it.0

I just went easy on the mayo, and it comes out great and healthy.
I also can cook them, than shred them, caramelize them with a little bit of tomato paste, than mix in some toasted pecans and lots of pressed garlic with salt.0 -
Nope...I HATE beets...I just don't like the taste. I need to eat them though! They are soooo good for you! I may try to reintroduce them...maybe in powder form in smoothies! lol good luck with that.0

I scrub them , cut off the roots etc and wrap them in foil and roast in a hot oven for about 30-60 minutes (depends on how big they are and how fresh - the smaller/fresher will cook faster). then i take them out and let them sit a bit until i can handle (open the tinfoil carefully because the steam will hit you).
then I cube, slice or grate and dress:
*lemon juice, a little oil, a pinch each of cumin, salt, pepper.
*lemon juice, oil, sliced scallion, salt, a pinch of sugar.
*my latest discovery is balsamic dressing - reduce 1/3 cup of balsamic vinegar with about 1 tablespoon of honey/molasses. pour over the beets, mix with a lilte olive oil, salt pepper0 -

I love beets! Cooked, pickled, whole, sliced, however....mmmm tasty AND good for you!0

Rinse them well and then put them in a pot, cover with water, add 1/4 tb salt and let them boil on medium for ~ 45 min or until when you put a fork in they are soft like potatoes. Then rinse them with cold water or wait until they are cold, and peel the skin. Keep them whole, or cut in slices add vinegar and extra virgin olive oil, toss and let them marinate for an hour. Eat as snack or on top of salad.0

I love them. I'll eat pickled beets straight out of the package. Since I found some frozen beets I've been adding them, in half serving amounts, to my blueberry banana chocolate smoothies. Even my toddler loves them that way.0

I juice them with my other veg n fruit , turns every juice red but it helps me consume a good quantity, otherwise they are forever in my fridge partially grated for salads0 -

Borscht -- even my infants sons ate the borscht! Quite tasty0 -
I usually just roast mine and serve as a side like I would potatoes or something...or I'll put them in a salad. I also make this beet salad with sour cream and horseradish that is pretty awesome. I also like to pickle them.
Just no canned beets...nasty ****...0 -
oh yes!!!! they are delicious served so many ways! I will eat them cooked and served warm, but my favorite are pickled beets with red onion...om nom nom0

My mom made me it these when I was pregnant. They are pretty good roasted, with salad but the best in my opinion is Borscht. I've never had'em pickled though.... hmm.0

Yes. Love 'em! Both purple and golden.
Note: I grew up hating them because they only ever got served as borscht and hardvard beets. Even with butter, I cannot tolerate them today. I like my beets plain-- warm or cold. I can also enjoy them roasted and glazed in a citrus mix for salads but to date that is the exception to the plain preference.0 -

Roasted is my favorite way. Drizzle safflower or sunflower oil with chopped garlic cloves and roast @ 425 for 20-30 minutes depending on how big you chopped the beets. Then drizzle balsamic vinegar over the beets. Delicious!
Or just steam and eat in a salad. You can also slice very very thin, coat with oil. Sprinkle garlic powder, salt, and rosemary over and bake until crispy.
I also like them juiced with celery and carrots.0 -
My cousin makes a chocolate beet cake and a beet and watermelon sorbet that are both delish!0
