I haven't made this in ages, but I used to love this stuff.
Lite Velveeta and Ro-Tel Vegetable Soup
Submitted by: FLOWERSROAD
Introduction
Chicken broth and vegetables souped up with Ro-Tel tomatoes and chiles and light velveeta cheese. Very filling.
Minutes to Prepare: 5
Minutes to Cook: 15
Number of Servings: 10
Ingredients
3 cans of chicken broth ( about 6 cups)
2 packages of frozen vegetables of your choice - I like broccoli or broccoli/cauliflower mix
1 10 ozcan of Ro-Tel diced tomatoes & green chili peppers
Velveeta Light Cheese 10 oz
Directions
In large stock pot combine chicken broth, Ro-Tel mix and frozen vegetables. When vegetables are cooked, add 10 ounces of light Velveeta cheese and stir until cheese has melted. Makes about 10 1-cup servings, about 90 calories per cup and is very filling.

Interesting...so it's like a mexican cheesy soup? The chicken broth could easily be replaced with vegetable broth.0
