Spiced Oatmeal Sugar Cookies :D

Well, what they're really called is 'ANZAC Biscuits' but I figured a title change was in order for non-Aussie MFPers who may now know what they are.
And what they are is very delicious indeed :bigsmile:
Tis a family-favourite recipe that I grew up on, so hope those of you who try it out enjoy. I've left the ingredients in grams/mls to make it easier for everyone

INGREDIENTS
- 150g (1 metric cup) plain flour
- 120g (1 metric cup) rolled oats
- 190g (1 metric cup, tightly packed) brown sugar
- 40g (3/4 metric cup) shredded coconut
- 1/2 teaspoon mixed spice
- 125g butter
- 40ml (2 tablespoons) golden syrup
- 40ml (2 tablespoons) water
- 1/2 teaspoon bicarbonate of soda
- 125g butter
METHOD:
- Preheat oven to 300 degrees Farenheight (150 degrees Celcius)
- Combine oats, sifted flour, mixed spice, sugar, and mix well
- Melt butter and golden syrup in a medium pan over low heat
- Bring butter and syrup mixture to boil, then remove from heat
- Stir bicarbonate of soda and water into butter-syrup mixture
- Add wet ingredients to dry and mix well
- Spoon onto trays and bake until tops turn golden brown (around 15mins)
Makes 24, each just shy of 100 calories.

It's a 'pale treacle', according to Wikipedia. I suppose maple syrup would work if you can't find that? Or even honey, although the flavours will be different0 -

By the way, I am on Big Corn's payroll. They pay me in corn.
