Slow cooker Taco Chicken

I tried this for the first time yesterday and it has instantly gone to the top of my favourites list - and it's so easy!

You will need:

400g chicken breast
1 can chopped tomatoes
100g passta
1 packet taco seasoning (I used old el paso)
1 onion
100g black eyed beans or kidney beans
150g sweetcorn
1 tbsp chilli powder (optional - I like it hot!)

Basically, bung everything in the slow cooker except for the sweetcorn.There should be just enough liquid to cover the top - add a little water if required.
Cook on low for 8 hours.
After 8 hours, shred the chicken with a fork - it should be so tender it should literally just fall apart.
Add the sweetcorn approx half an hour before serving.

I served this over rice with low fat cheddar on top. I made it into 3 servings but it could easily feed 4!

    I make a similar one that I found on Pinterest....it has a brick of low fat cream cheese in it instead of shredded cheese. We serve ours in low carb flour tortilla's. So yummy!! add lettuce, tomatoes and a slice of avocado and dive in!! :-P

    what's "100g passta " - you mean uncooked pasta like macaroni? or is that some kind of tomato paste?

    Passata sorry - missed off an 'a'!

    It's more like liquidized tomatoes than a paste, we get it in the UK, not sure about anywhere else.
