I'm no vegetarian, but get alot of use from the Moosewood Cookbooks (Vol I and II). It's chalk full of healthy stuff that I add meats if it strikes my fancy. Happy Cooking!

I'm a big fan of Mark Bittman. I really like his "How to Cook Everything" book...I use it most often of any cook book I have and I have tons because I cook all the time.

that said, I guess it depends on what you consider healthy. Most cookbooks are going to utilize natural, whole ingredients...but I also don't see things like butter and cream as "bad" foods...just calorie dense. I actually have the opposite view of many...I won't touch a cook book that replaces natural ingredients like butter with margarine and the like...why use fake food.

I'm not a vegan, but I'm in love with my copy of Veganomicon. I also really enjoy all my Jamie Oliver books for simple stuff that heavy on fresh produce.
