Peanut Butter Fiber One Egg Pancake - Reduced Sugar

I made this today and thought it was pretty good. I eat sugar substitutes and am aware they are not always the best choice, so if you'd prefer not to you can make this however you like. The idea came yesterday when I was craving something crunchy so had a tablespoon of Skippy Reduced Fat Peanut Butter and half a cup of Fiber One Honey Cluster Cereal in a bowl. <-- Good snack idea. Also, to be completely open I did not say I only had one serving of the above snack...
Ingredients
- 2 Eggs
- 1 tablespoon of Peanut Butter (I use the reduced fat version because it has more sugar than the plain stuff for snacks... With sweetner added I'm sure natural peanut butter would be just as good.)
- 1-2 tsp of Pure Vanilla Extract
- SMALL sprinkle of Salt
- 2 tablespoons of Sugar Free Maple Syrup (or regular)
- 1/4 to 1/2 cup of Fiber One Honey Cluster Cereal
- Pam spray or any other non-stick spray
- I microwaved the peanut butter for 25 seconds to soften it a bit, then added the vanilla extract and stirred. Room temperature or natural peanut butter at room temperature may be best for mixing. I then added the eggs and whisked together. The peanut butter cools and chunks a bit, but just try to combine as much as possible.
- Then added the SF Maple Syrup, Salt, and Sweet & Low.
- I think here I made a mistake, because I added the cereal before heating the pan. For a better crunch I assume adding the cereal last and cooking immediately would be best. I'll try that tomorrow. Play with it and see how it works best for you.
- Heat a small pan for about a minute at the low side of medium heat, spray with non-stick spray, and cook on one side until the eggs bubble a little then flip for 30 seconds or until you're comfortable with it.
Top with a little more syrup and enjoy!
