Nacho Chicken Bake

NACHO CHICKEN BAKE
Makes 4 servings
4 skinless, boneless chicken breasts
Pinch of salt
1/4 cup sour cream
2/3 cups chunky salsa
2 cups coarsely crushed nacho chips
1 cup grated aged cheddar or monterey Jack
Preheat oven to 375F.
Coat a small baking dish with olive oil ( I just put some olive oil on a papertowel and rub the inside of a pyrex baking dish.
Place chicken in dish.
Sprinkle with pinch of salt.
Spread sour cream over chicken, then cover with salsa.
Press half the nacho chips into the salsa & sprinkle with half the cheese.
Sprinkle with remaining nachos, then cheese.
Bake in center of oven until cheese is bubbly, 35 to 40 minutes.
Dish up with extra salsa, if you like.
Great with rice & slices of avocado* (cals extra)

385 calories, 18.1g fat, 15g carb, 608 sodium,1.9 fiber, 264mg calcium.
