Butter & Olive Oil Spread = 1/2 the calories by volume

Homemade spreadable butter/oil mixtures are very easy to make and "make the calories go further" or so it seems. Whip together equal parts softened butter, olive (or other healthful) oil and water. This is most easily done with an electric mixer whisk but can also be done with a food processor. You can use salted or unsalted butter and add or leave out salt as you prefer.
1 cup (2 sticks) softened butter + 1 cup oil + 1 cup water = about 4 cups of spread. (2 cups of fat + water + air = 4 cups of spread)
Whip softened butter and slowly add oil and water while continuing to whip. Add salt if desired. Pack in 1 cup containers and freeze all but the one you will use currently (keep it refrigerated).
