Ethnic cuisine

Hey!
I love food from different regions, I wonder if you know food from different cultures that are good for people dieting.
I am not on a low-carb diet, but I care about the glycemic index of food and obviously I am on a calorie-restricted diet.
I love sushi and as the GI of it is between 50 and 55 it is still okay and it is not very high in calories.
I know there is a lot of Italian food that is healthy and good for weight loss, but obviously pizza and pasta with cheese sauce is not ;)
I personally love Mexican, Middle Eastern, Mediterranean and Indian food, but I am also open for dishes ffrom other regions.
What are your suggestions?

    Fish tacos

    small corn shell tortillas
    White fish, grilled, broiled or baked
    cook fish and cut into pieces
    Top a heated corn shell (microwave or oven, or grill) with fish
    Top with shredded cabbage, salsa, sour cream (I use plain fat free greek yogurt), onion, cheese, if desired, cilantro and guacamole or avocado if you like it.

    Your fish can be plain, or season to taste. Yummy, low calorie and tastes good!! Authentic tacos use two small shells per taco, so it's up to you.

    Italian: Tagliatta di Manza & Carpaccio
    Thai: Larb & Som Tam
    Vietnamese: Pho & Grilled Goat & Summer Rolls
    Indian: Tandoori Chicken
    Japanese: Sashimi with Plain Rice & Miso Soup
