I'm rubbish at making curries but I've been determined to make a nice one that's healthy and I think I've succeeded. Best served with rice, naan or chapati. I did it with brown rice and it was amazing! You wouldn't believe this is low in fat, it's so thick, rich and creamy!

Ingredients (serves 2):
Chicken breasts (I used 160g per person)
1 tablespoon of chopped fresh ginger
2 cloves of garlic chopped
1 red onion chopped
200g semi-skimmed evaporated milk
45g balti paste (I used Patak's)
Salt & pepper
Olive oil cooking spray (I used FryLight, and used 4 sprays)
Directions:
1. Cut the chicken breasts into chunks and boil in water until nearly cooked through
2. Spray a pan with cooking spray and cook the onion, garlic and ginger until softened
3. Add the chicken, evaporated milk and the balti paste to the pan and simmer, season to taste
4. Simmer until the sauce has thickened to your liking then DEVOUR!
Calories/macros per serving based on the ingredients and quantities I used (no rice, just the curry):
433 calories
23g carbs
11g fat
58g protein
