Vegetable/chicken soup?

I have veggies (squash, onion, bell pepper), garlic, mushrooms, potatoes (If they haven't gone bad over night), chicken, black beans, and rice. I was thinking it might make a decent soup. But I only have beef bouillon cubes, no veggie or chicken stock. I was thinking of doing it in a crock pot. Would the bouillon cubes be a decent substitution, or is mixing beef with chicken a no-no? The veggies and such are going to start going bad soon and, due to it being a bank holiday, my plans to go out and get the last ingredient needed for a mexican casserole I love went out the window, so the veggies need cooked. Never made soup before and figured now is as good a time as any, and my crock pot has been feeling neglected.

    Using beef bullion won't be a problem, just a stronger flavor than chicken or veggie stock. I don't know if you have a whole chicken, if that is the case you can put it in the slow cooker with water and mirepoix and there won't be any need for additional stock, it will make its own as it cooks! Soup is pretty easy, these also sound like good ingredients for enchiladas or fajitas!

    Thanks for the response! I have chicken breasts with rib meat (walmart sells the stuff for $2/lb where I am). If I had tortillas I'd make the heck out of some fajitas, I have cumin and chili powder and I've made fajitas with it before that turned out fantastic.
