I so don't want to go to the store right now, but I'm at a complete loss as to waht to make that is healthy.

potatos
blue cheese crumbles
onions
salsa
grated parmesean
Black Bean Soup in a can
tortillas
eggs
shrimp
frozen turkey
one tomato
anyone see any ideas?

Some sort of quesadilla?... burrito????
Cook the ground turkey, add the onions, mix in some salsa, sprinkle some cheese.... make a quesadilla or burrito.

I forgot to add that i wanted to use up the potatos, which are already half-baked, from an earlier mis-adventure!0

I would do scrambled eggs with the tomatoe and parm cheese (I don't know if blue cheese would work cause I haven't had it) and then warm the tortilla in the microwave (20 sec) and wrap the eggs in it. Heat up the black bean soup to eat on the side!

Use the potatoes by making hashbrowns for the side!0

How about just adding some of that potato into the quesadilla/burrito?
Or, make a turkey burger (w/o bun) & finishing cooking the potatoes and add some blue cheese ontop?0 -

you could saute the shrimp and onion in a pan w/olive oil non stick spray, put it in the tortilla with chopped tomato, salsa and either the blue cheese or parmesan(I love shrimp and blue cheese together and I hate blue cheese:laugh:)0 -
a breakfast for dinner might be good.
I wouldnt' want tortilla AND potatos (too much starch calories at once for me)
but maybe I'll do
homefries with onions and bluecheese crumbles and a little tabasco
and then a shrimp omelette thing? or stir fry it all together and make a "scramble".
I wonder if I have any other frozen meat in the freezer. Could do the fries and blue cheese and eggs with a small amt of sausage or the ground turkey. hmmmmmm.

that's good to hear, because I love blue cheese but was afraid shrimp/blue cheese would be a bad combo!
I'll present my 2 ideas to my boyfriend and see what he wants, since they both sound good to me now!
either a scramble with homefries, onions, shrimp and blue cheese
or the bunless turkey burger with homefries on the side

And I'm craving coffee right now with all the snow falling down. Maybe breakfast for dinner is inching toward success!0 -
What I make is a Mexican Layer Bake
Stir fry the ground turkey and onion then add the jar of salsa to half and cook for 3 minutes.
Add the black bean soup to the remaining half and cook until heated through.
Put one tortilla in the bottom of a springform pan.
Top with Some of the cooked ground turkey and black bean soup mixture
Another tortilla
Could use scrambled eggs here?
Another tortilla
Rest of turkey mixture with salsa here.
Final tortilla topped with sliced tomato???
Cover with foil, bake at 350 for 25 minutes. Slice into triangles and serve with a dollop of light sour cream.
I do all sorts of these layer bakes, you could use ground turkey with the blue cheese crumbles as a layer, mashed potatoes with sauteed onions and parmesan....use your imagination on what you have to use up. Sometimes just repeating the same layers is good too0 -
Use your tortillas like a pizza base, top with the tomatoes, cooked ground turkey and onion mixture, then blue cheese crumbles?
Again mix and match and make a few variations.

Oh yeah, shrimp and bleu cheese is where it's at.
There is a place in Columbia, MO (MIZZOU RAH!!!) that takes french bread sliced in half then puts garlic, butter, shrimp and blue cheese on top of it all and bakes it, it is so good it is SICK!!!0
