    1. I weigh myself everyday but I don't let the numbers drive me crazy.
    2. If you're doing that much cardio, make sure you are eating enough.
3.Best way to lose fat is to eat at a calorie deficit (and be patient).
    4. I don't think it matters when you work out. Find a time that works best for you.

As for what you eat, calculate a moderate calorie deficit for your goals, probably for a loss of .5 to 1lb a week, calculate your macro requirements, get some more fiber in, and allow yourself some treats. Also, consider starting a weight training program to maintain your lean muscle mass Here's some helpful links.

I rarely weight myself, it doesn't really matter what exercise you do as long you like doing it, you lose fat eating at a deficit, and you can workout whenever it fits your schedule.

Your menu really tells us nothing. It's about calories. Measure/weigh your food, track the calories and stay in a deficit. I could eat your menu and be fine, my hubby could eat that and have it be 3,000 calories just by the volume he can pack away.

90% of your weight loss will come from your diet. Doing excessive amounts of exercise will just make you tired and at risk for an injury not to mention you'll just get sick of it and quit.
