My New Favorite Chili recipe

Totally acceptable meatless alternative to our regular winter night standby. Serve with shredded reduced fat Sharp cheddar cheese (1 ounce per serving) and whole wheat saltines (5 per serving), Or whatever you love to go with chili.
Organic Whole Grain Quinoa, 1 cup (46g) dry
Black Beans - Low Sodium - Drained and Rinsed, 3 container (1 1/2 cups ea.)
Frozen Yellow Sweet Corn, 1 cup frozen
Diced Tomatoes In Tomato Juice- No Salt Added, 1 container (1 4/5 cup (120g) ea.)
Vegetable Stock, Lower Sodium, 3 Cup
16 oz. water
Poblano Pepper, 1 pepper diced
Green Pepper, Raw 1 pepper diced
3 large garlic cloves, minced
Cilantro, bunch chopped
large onion, diced
1 cinnamon stick
1 tbl cumin powder
3 tbls chili powder
1 tbl black pepper
4 beef bouillon cubes
cook quinoa as package directs until done, set aside.
combine the rest of the ingredients in a large soup pot and bring to a rolling boil.
Reduce to low and let simmer for 1 hour.
when done, stir in cooked quinoa and serve with shredded cheese and saltine cracker.
makes 14 one-cup servings
Per Serving: 157calorie, 31 carbs, 2 fat, 0 chol, 460 sodium and 2 sugar
and it is Delicious !
