Cottage Cheese Pancakes - high protein
This is probably a repeat but i just tried these today and they are really, really good. I have tried a bunch of different pancakes lately and these are by far the best. I was worried that the cottage cheese would be too lumpy because it is not blended but it is not, you can't tell it is in there.
3 eggs
1 cup cottage cheese
1 teaspoon vanilla extract
1 tablespoon honey
1/2 cup flour
1 teaspoon baking powder
butter, oil, or cooking spray
1. Whisk together the eggs, cottage cheese, vanilla extract and honey.
2. In a separate bowl, whisk the dry ingredients.
3. Pour dry mixture into wet mixture and stir until just combined.
4. Heat griddle over medium-high heat and lightly coat with cooking spray (or oil or butter). Pour about 1 tablespoon of batter onto griddle for each pancake.
5. Cook until you see bubbles appear (about 2-3 minutes), flip and cook on the other side until set (about 2 minutes).
I used a 1/4 measuring cup for each pancake and i got 10 pancakes out of them (really fill the measuring cup).
Tip: For freezing, let cool completely. Then put a piece of waxed paper in between each pancake, wrap tightly in plastic wrap and put in a freezer bag. I typically freeze 6-8 together so it's easy to pull out a few portions at a time.

I just used syrup because i did not have any fruit. Jam would be good too.
Just top with what you would normally use. They taste just like regular pancakes (or real close).0 -
