muffin mix subs

On a whim I purchased a box mix of pumpkin muffins. What can I sub in instead of eggs and oil? I've made cake mix with canned pumpkin before, but would this be too much pumpkin? Or maybe banana or applesauce? Thanks!

    Eggbeaters and applesauce would work and lower the calories considerably. I'm going to look for that mix - what brand is it? It does sound like too much pumpkin with the added can, and I don't think the muffins would turn out very well.

    greek yogurt as an egg sub (chobani has a chart on their site to show you the conversion) and either applesauce, pumpkin or banana for the oil

    I have had to find subs for eggs for baking for some friends and family with dietary restrictions for eggs... There is lots of stuff on the web and books.     i don't have much experience with subs for oil. I tend to try and buy the best oils I can. I use organic and first press to avoid all the problems with heat and chemical extracted. Biggest challenge i am having is finding out how not to use vegetable shortening. For me i use butter and lard, but I am finding it difficult to find good substitutes for baking for my vegan friends and for my friends who cannot have lard for religious reasons.

    Krusteau, idk the spelling, pumpkin spice muffins. Greek yogurt and applesauce sounds doable!

    may help some



    * Substitute applesauce for butter (1 cup applesauce = 1 cup butter)
    * Substitute mashed bananas for sugar (1 medium/large mashed banana = 1 cup sugar)
    * Substitute whole wheat flour or almond flour for white flour

    Club soda works as a subsitue for eggs and oil.
