Favorite Meals

Am I the only person who has a favorite meal that I cook a couple of times a week? I absolutely love grilled chicken breast and homemade sweet potato fries. I could eat it for lunch and dinner 7 days a week, and I do eat it probably 3 days a week! What's your favorite meal?

  • I love salmon with pesto sauce, or lemon wedges and dill, and spinach salad with all veggies except brussel sprouts and asparagus :) I could eat salmon 4 days a week and then cod I love cod too :)

    i recently discovered something i love, it's tuna noodle "casserole"
    basically i used shirataki tofu noodles (40 calories a bag) and boiled them, put them in a baking dish and mixed with alfredo sauce, tuna (1 can), 1 chopped tomato and scallions. topped it all with grated parmesan cheese and baked at 425 for 25 minutes.

    i used walden farms alfredo (0 calories) so it comes out to to 235 calories, 14g carbs, 6g fiber, 4g fat and 39g protein. love love love, super filling and yummy.

    never thought id enjoy tuna warm!

    I have a few meals like that!

    breakfast tacos - at least 3-4 days a week I have this in the AM. A small flour or corn tortilla with a fried egg and a little bit of southwest dressing. Sometimes I add mushrooms, bell pepper and/or onions to the egg.

    salmon, broccoli & couscous - SUPER easy, perfect light meal for when my husband & I are in a big rush. We get all of it from Aldi (their wild caught flash frozen salmon, steamable broccoli, and garlic couscous boxed) and it winds up being only $8-9 to serve four (we eat this twice in a week, many weeks)

    grilled cheese...healthier variations. I've done so many combos of cheeses, spinach, kale, mushrooms, onions, artichokes, avocado, etc. This is one of my go-tos. I use a 100% wheat bread with no HFCS etc

    I also like to heat a Morningstar veggie patty (any type) and eat it covered in chopped lettuce with a little bit of southwest dressing or mixture of light mayo & ketchup. This is especially good with sweet potato fries.

    I really do cook 'proper' meals as well - but just realized most of this is processed, frozen food :-/ I honestly really like it though!

    Mexican food. I could eat it 5 days a week. I love sauteing onions and peppers, sometimes mushrooms together with cumin, low sodium chili powder, onion and garlic powder. Add some shredded chicken or ground turkey and you've got a yummy meal to roll up in a wrap with a bit of cheese.

    I LOVE making "zoodles" (zucchini that's cut like pasta) with fresh mushrooms, peppers, basil, spinach, and really whatever veggies are in my fridge. It's super low calorie -- just 40 cals from Ragu when I don't have time for a homemade sauce, and the rest is all veggies. Sometimes I'll crumble a little feta over it too. So good!

    I also love making homemade sweet potato fries...still experimenting to find the perfect seasoning for them!

    I cut them up, toss in olive oil, then sprinkle with sea salt and garlic, then bake on 450 on a sprayed pan for ten minutes then flip for another ten. Love them
