Yummy "Island-themed" breakfast!

I've had some coconut-almonds milk I've been trying to use up, as I'm not a big fan of drinking it straight. I do like the light coconutty flavor though :smile:

So what I've made was a coconut milk pancake batter.
-24 grams of standard pancake mix (I used Wegman's brand)
-1/4 cup of Almond Coconut milk (I used Almond Breeze brand)

I whisked it up and made mini pancakes (about 4 slightly bigger than sand dollar sized pancakes) and I paired it with 85 grams of lemon chobani yogurt and a banana. I used the yogurt as a spread for the pancakes. It was great! There was a coconut taste in the pancakes, but it wasn't too strong.

*also note that I used unsweetened almond coconut milk and the pancakes themselves tasted sweet enough even before spreading yogurt on them, and I have a hugeeee sweet tooth! :love:
