Let's get this thread started for Christmas so I'll have something to open. What's your fave kind? Mine are the newly minted spinach concoctions. Yours?

    Oh yeah those are my favorite too. Except I never had a tamale with black olives in it, and that's a sad sad shame because I :heart: black olives.

    I love the pineapple one's during the holidays. I just wish they would sexify them somehow with like brown sugar in the masa or maybe cream cheese sauce on the side. Something.

    A couple of years ago (when I had a LOT of venison) I made some with pork and deer combined. They were really tasty. The ones I made with just deer were a little dry. I really want to get a pot big enough for a whole pig head because those are sooooo good.

    We have banana trees in our back yard. If I make tamales this year I may make some with the banana leaves instead of corn husks.

    Yes those banana leaf one's are my OTHER favorite tamales. The one's from Peru. YUM! With chicken and veggies OMG.

    Yup, totally fixed it. Any good recipes you'd suggest?

    Start with the classic. Red beef tamale. Go to your local mexican market, buy their masa and ask them how they recommend it prepped. Get some beef and cook it. Boil some red dried chiles in water with garlic and salt. Put that in the blender. When the meat is cooked put it in a pot with the chile. Soak your "hojas" corn husks...oops I forgot get those where u get the masa. Get a soaked softened husk and hold it pointy side toward you spread about a tablespoon masa on it and top that with about a tablespoon of meat filling. fold over and the bottom up like swaddling a baby. Place in a big pot with a bowl turned upside down on the bottom, folded side down. Stack them all side by side until they look like johnny's pic. Then put a little water in the bottom of the pot, put a lid on it, turn on the heat and cook it for liek 20 mintues and check to make sure hey aren't watery anymore. You know how a tamale is supposed to feel. Moist and crumbly but not wet or doughy.

    you sound just like my husband. Beef, or chile, or cheese, never pork for years. and Yet now he's a bacon fiend. Go figure.

    I love to cook and love tamales but I have never made them either.
    Looks very involved plus I don't have a big deep steamer.
    Can anyone recommend maybe a really good tamale casserole recipe ?
