Coconut Flour ideas

I bought a bag of coconut flour and I forgot why I bought it. I'm LOWER carb and a vegetarian. Any ideas on how to use it? (It wasn't cheap). I did use it as a breading for baked zucchini strips but soy flour worked better IMO.

Every time I try to bake with it, my stuff comes out dry. I'm probably never using enough liquid. Every 1 cup of flour in a recipe use 1/4 coconut flour and double liquid.0

I use a ton of recipes off comfybelly.com and she uses coconut flour quite a bit. She also gives pointers for making flour conversions from all-purpose to coconut.

biscuits (or cookies for you Americans)
coconut crepes are truly amazing - with sugar and lime juice mmmmm
throw it in curries if I looking to thicken them a bit
the possibilities are endless, once you're used to using it, you'll want to have it on hand all the time.0 -

I really like it for making coconut chicken with some unsweetened coconut...but after looking at your name you might not eat chicken, sorry0

this is golden information...my cookies were drier and crumbly last night. will add more apple sauce or egg whites tonight and try it again.

Ingredients:
15 oz. pumpkin puree (about 1 1/2 cups)
3/4 cup coconut flour
3/4 cup maple syrup
1 1/2 teaspoons ground cinnamon
3/4 teaspoon ground ginger
1/4 teaspoon ground cloves
3/4 teaspoon baking soda
1/4 teaspoon salt
2 large eggs

I don't like having an entire cake in the house, so I make mug cakes so I'm not tempted to overeat.
